Hottest of the Hot Curry Chicken

How hot is hot. This is one of our favorites, we’ve set this one at a medium level, but feel free to adjust to your personal preference. We recommend starting with a little less pepper sauce then adding as you go. More curry only makes this one a keeper.

    • Hi Donna,
Here is one of our favorites. This one goes great with a side of rice or baked sweet potato and your favorite vegetable.

      Tangy Ginger Hawaiian Chicken

      4 chicken quarters (about 2 1/4 pounds)
1 cup Basic Foodism Tangy Ginger barbecue sauce
8 oz can of chunked or crushed pineapple in its own juice
      1 tablespoon extra-virgin olive oil
1 medium sweet or purple onion, cut into ¼ inch strips
1 large red bell pepper, sliced into ¼ inch strips
1 large green bell pepper, sliced into ¼ inch strips
      3 cloves garlic, smashed
      Kosher salt
      Freshly ground pepper

Rinse, pat the chicken dry and sprinkle with salt and pepper to taste. Oil the bottom of a 9 x 12 casserole dish with 1 tablespoon of olive oil. Place chicken in dish, add sliced onion, bell pepper and garlic. Cook on broil for 5 minutes, turn and cook other side for 5 minutes. Add crushed or chunked pineapple with juice to dish and coat chicken with 1 cup of Basic Foodism Tangy Ginger barbecue sauce. Bake at 400 for 25 minutes. Place oven on broil, cook until the skin is crisp or chicken becomes carmel brown. See with a bake sweet potato or rice and your favorite sides.
