Hotter than 104º Meatloaf

Ingredients

1 cup cracker crumbs

½ onion, finely chopped

1 carrot, peeled and shredded

½ cup mushrooms finely chopped

3 whole cloves garlic finely chopped

½ red bell pepper finely chopped

1 lb ground chuck

1 lb ounces ground sirloin

1 ½ teaspoon kosher salt

1 teaspoon finely ground black pepper

1 egg

 For the glaze:

½ cup Hotter than 104º Barbecue Sauce

 Directions

Heat oven to 350ºF. In a food processor bowl, combine crackers, Pulse until the mixture is of a coarse texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine ¼ cup of Hotter than 104º Barbecue Sauce, the vegetable mixture, ground sirloin, and ground chuck with the crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat. Place into a 10-inch loaf pan to mold the shape of the meatloaf. Turn the meatloaf out of the pan onto the center of a sheet pan. Brush the remaining sauce onto the meatloaf after it has been cooking for about 25 minutes. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaf is cooked through.
