Hottest of the Hot Curry Chicken


6 cups water

4 chicken leg quarters

1 medium sweet onion (sliced)

4 cups carrots (about 3 large ones)

4 medium redskin potatoes cubed

5 tablespoons curry

3 tablespoons Basic Foodism Hottest of the Hot pepper sauce

1 teaspoon sea salt

2 teaspoons black pepper

3 teaspoons cumin

4 cloves of garlic (smashed)

5-6 sprigs fresh thyme (1 teaspoon leaves)

2 tablespoons olive oil


Chop/dice carrots and potatoes then set aside. Heat up large pot with olive oil then add garlic and onions. Cook until garlic and onions becomes clear, being careful not to burn, add chicken and black pepper, cumin, curry, salt, thyme and Hottest of the Hot pepper sauce. Stir to mix seasonings and brown chicken under high heat. Add 1 cup of water and scrape bottom of pot with a wooden spatula to deglaze. Add remaining water, potatoes and carrots, cover and let simmer for 30 minutes. Serve with your favorite starch or veggies.
